How much ease is in a slim shirt?

Slim shirts have 2-3 inches of ease at chest. So a 40" chest body in a slim shirt has 42-43" finished chest. Regular fit has 4-6 inches; relaxed has 6-8+.

Does stretch fabric need ease?

Less. Stretch fabric (4-way stretch with spandex) can have 0-1 inch of negative ease (smaller than body) and still be wearable. Rigid wovens need 2-4 inches of wearing ease minimum.
